Ingredients


Zafarelli Linguine No. 1 500g
3 tbsp olive oil
250g Italian style pork sausage, skin removed
1 garlic clove, chopped finely
3 cups of chicken stock
1 bunch broccolini, chopped finely
3 tbsp butter
½ cup grated pecorino
¼ cup flat leaf parsley, chopped

Method


  1. Cook the pasta in a pot of boiling salted water according to packet directions.
  2. Meanwhile, heat oil in a pan over medium heat. Add in sausage meat and cook for 4 minutes.
  3. Add the garlic and cook for 1 minute until fragrant.
  4. Pour in the chicken stock and add the broccolini. Bring to the boil and cook for 3 minutes.
  5. Stir in the butter, cheese, and parsley.
  6. Drain the pasta and add it to the pan. Toss well to combine.
  7. Season to taste and serve topped with extra parsley and pecorino.
