Ingredients
Zafarelli Angel Hair No. 9 500g
800g vine-ripened tomatoes, cut into quarters
2 garlic cloves, finely chopped
⅓ cup extra virgin olive oil and extra drizzle to serve
⅓ cup grated parmesan, plus extra shaved parmesan, to serve
½ cup basil leaves
250g bocconcini, roughly torn
Salt and pepper
Method
- In a medium bowl, combine the tomatoes, olive oil, garlic, parmesan, salt, pepper, and half of the basil. Mix well and set aside to marinate.
- Meanwhile, cook the pasta in a pot of boiling salted water according to packet directions.
- Once cooked, drain the pasta and transfer to a large bowl. Add the fresh tomato mixture along with a splash of pasta cooking water, and toss well to combine.
- Fold in the bocconcini and remaining basil.
- To serve, sprinkle with extra parmesan and drizzle with olive oil.
